Ale Yeast

Ale yeast is also known as Saccharomyces Cerevisiae. It is frequently called top-fermenting yeast because of the ability of some varieties to form a layer of yeast on the surface of the wort during primary fermentation.

Ale yeast generally performs best at fermentation temperatures between 55-70 Fahrenheit (13-21 Celsius).
