Alpha Acid

Alpha acid is the, hop compound that is responsible for the bitterness of beer. It is one of the two main compounds found in the soft resins in hop lupulin glands.

This acid is water soluble and converts to a bittering agent during the boiling process.

The amount present in a given hop is expressed as a percent of the total beta acids in the hop cone.
