Alpha Acid Units

Alpha acid units are a measurement of the potential bitterness in hops for beermaking. The numerical value is equivalent the percentage of alpha acid that is present. For example, one ounce of hops with an Alpha Acid Content of 1 percent contains 1 AAU, or .01 ounce of alpha acid.

These units provide the brewer with a way of determining the amount of a given hop required to achieve target levels of bitterness in a beer.

It is frequently represented by the acronym AAU.
