Amylase
Amylase refers to any of various enzymes in malt that convert starches to sugars by breaking the bonds that hold the starch molecules together.
These enzymes help the brewer by creating fermentable sugars for the yeast to metabolize.
These enzymes are alpha amylase, beta amylase, dextrinase, and beta glucanese.
