Adjunct Grain

Adjunct grain is any unmalted fermentable grain, such as corn or rice, that is added to beer via the mash kettle.

These are usually added to enhance flavor or alcohol content but may also make the beer lighter-bodied or less expensive. Any starches that are added must be converted to sugar by malt enzymes present in the mash kettle.
