Caryophyllene is one of the major types of hop oils contained in the lupulin glands.
Greater amounts of this oil are found in hops used for aroma. An oxidated by-product of this oil can produce a spicy or herbal flavor.
The amount present in a given hop is expressed as a percent of the total oils in that hop. Noble hops typically have a ratio of Caryophyllene to Humulene of greater than 3.2.
