When Rome fell, chaos ensued. Without the stabilizing influence of the empire in Europe, people were invading and migrating all over the place. Only the monks really kept their heads, preserving scholarly texts and craft practices like brewing. During this time of speculative hygiene, it was wise NOT to drink eight, or even any, glasses of water a day. Beer was one of the safer options, something in a bit of demand, giving the monks a way to earn their keep. Although there was the occasional Viking raid to worry about, the monastic brewing tradition took hold.
