Storing Beer: Time
All good things come to an end, and then they’re not good anymore. A beer stays fresh and at its best for about three months; wait too much after that, and you can only wonder what it must have been like in its glory days. Of course, there are exceptions. High gravity beers such as barley wines benefit from long storage periods, giving time for flavors to blend in these rich-character brews. Also, more time aids Lambics, aged in barrels and often blended from different batches.
