Storing Beer: Air

Air is not a friend of beer, and it causes problems in several ways related to storage. Air contains oxygen, and oxygen interacts with beer to cause, yes, oxidation. The effect of oxidation is a stale, old-tasting beer. Oh, but the beer is bottled, you say? The headspace in home-bottled beer contains air, and over extended periods of storage time oxidation can occur. Also, remember that beer left opened or poorly sealed will lose its carbonation to the air. So, there is another reason not to leave a poured beer unattended. Once it is poured, it is no longer to be stored but to be enjoyed.
