What it does :
Food-grade chalk is used to increase temporary hardness or increased mash pH.
What it is:
This is the common name for calcium carbonate.
How it works:
Food-grade chalk adds temporary hardness and raises the mash pH.
Use of 1 teaspoon in 5 gallons adds 60 ppm of carbonate and 36 ppm of calcium. Add to the water when mashing for all-grain brewing, or just before the boil. Do not add more than 1.5 teaspoons per gallon.
