Be a team player, though, and make sure the temperature stays right for the yeast and the brew stays uncontaminated. While you stand helplessly by, the wortís specific gravity is dropping as its dense sugars become less dense alcohol and carbon dioxide. By the way, you can dust your hydrometer off to measure the gravity as fermentation progresses.
