Flaked rye adds a distinctively spicy aroma and flavor to your beer. It increases your beer's body and smoothness, and will help it to form a creamy head. It will also add a characteristic dryness to the mouthfeel.
What it is:
Flaked Rye is rye that has been steamed and rolled to gelatinize its starches, making them accessible for conversion to sugars. Because the grain is un-malted, it does not possess the enzymes required for this conversion by itself and it must be mashed with malted grains.
Flaked Rye can be up to 5 percent of your grist. Of course, the actual amount you need depends on the style of beer that you are making. Use our brewing calculators to compute the exact amount you need to achieve your specific original gravity and color targets.
Because Flaked Rye has been processed into flaked form, you do not have to pre-cook it to gelatinize its starches. You can add it directly to your mash to convert its starches to fermentable sugars.
