Torrified Wheat is an unmalted grain. It will provide a slightly toasty flavor without graininess, that also enhances head retention to your beer.
What it is:
Torrified Wheat is a wheat grain that is light straw, or 1.3 Lovibond, in color. Its kernels have been puffed and popped open after processing with high heat. This allows their starches to be converted more quickly in a mash.
Torrified Wheat can be 5-10 percent of your grist. Of course, the actual amount you need depends on the style of beer that you are making. Use our brewing calculators to compute the exact amount you need to achieve your specific original gravity and color targets.
Because Torrified Wheat has been processed into flaked form, you do not have to pre-cook it to gelatinize its starches. You can add it directly to your mash to convert its starches to fermentable sugars.
