Fermentation: High Final Gravity

Problem:

If the final gravity of your beer is much higher than expected, problems with the fermentation are to blame.

Causes:

  • Incomplete fermentation can be caused by insufficient oxygen in the wort for yeast activity.
  • Use of yeast in poor condition or employing the wrong yeast strain for a high gravity wort can result in inadequate fermentation.

Cures:

  • Ensure that the wort is aerated properly before the yeast is pitched.
  • Use high-quality yeast in good condition, and ensure that the strain is appropriate for high gravity worts.
