Flavor: Sour or Acidic

Problem:

Detecting sour or acidic flavor in your beer indicates that organic acids are present. They are the result of lactic fermentation that is intentional in some beer styles such as Berliner Weisse.

Causes:

  • These acids are formed by intrusive bacteria that metabolize wort material differently than yeast and produce small organic acids.

Cures:

  • Maintain sanitary conditions.
