Aroma: Musty or Moldy

Problem:

A musty or moldy beer is a sign that these components have come in contact with the beer somewhere in the brewing and storage process.

Causes:

  • Bacterial contamination can cause a musty aroma in the beer.
  • Lengthy aging of bottle-conditioned beer in a musty environment can cause this aroma to transfer to the beer through the bottle seal.
  • A sanitation problem with the storage of ingredients may cause this aroma. A leaking package seal may cause spoilage of ingredients.

Cures:

  • For extended bottle-conditioning, take care to store beer in a cool, dry place.
  • Maintain sanitary conditions.
