Aroma: Freshly-cut Grass

A grassy beer smell is caused by the production of aldehyde (cis-3-Hexanal) from the bacterial metabolism of barley.

Causes:

  • Bacterial metabolism of barley is caused by damp malt or grain.

Cures:
