Aroma: Meaty or Broth-like

Problem:

A meaty or broth-like aroma indicates the presence of methional. Methional is one of the by-products of yeast during fermentation. If not broken down by the yeast, it can produce an unpleasant aroma.

Causes:

  • An excessively low fermentation temperature for the yeast strain being used prevents methional from being processed.
  • The malt variety used can contribute to the occurrence of a meaty, brothlike aroma.

Cures:

  • Ferment at temperatures of at least 55 F (12.8 C).
  • Change the malt variety used.
